Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chopped meat
Forms the body of the balls and provides the main savoury flavour.
Egg yolks
Bind the mixture and help it hold its shape while cooking.
Bread crumbs
Absorb moisture and add body, then form a crisp golden coating when fried.
Butter
Adds richness and moisture to the meat mixture.

The step that matters

Fry the balls in hot oil until golden brown. Oil that is not hot enough lets the coating soak up fat and turn greasy before it browns, while overheated oil can scorch the crumbs before the meat inside is cooked through.

Swap the onion

How well each one fits the dish's main ingredients (meat, egg, butter, bread, parsley, pepper):

  1. Shallotfits better
  2. Capsicumfits better
  3. Asparagusfits better
  4. Onionthe original

Fit is the average pairing score against meat, egg, butter, bread, parsley, pepper. Candidates are from the same food group and used in at least 100 recipes.
