What each ingredient does

Dandelions
Provide the bitter, leafy base that the dressing coats and softens.
Butter
Adds richness and body, emulsifying with the egg yolks into a smooth dressing.
Hard boiled eggs
Yolks enrich and thicken the dressing; whites and slices add texture and mild flavor.
Vinegar
Adds sharp acidity that balances the bitter greens and the richness of the butter.

The step that matters

Pour the hot vinegar over the butter mixture and stir until cool. Hot vinegar poured over the butter and yolks helps them blend into a smooth, pourable dressing. Adding it too fast or stirring too little can leave the dressing greasy or lumpy.

Swap the walnut

How well each one fits the dish's main ingredients (dandelion, butter, egg, vinegar):

  1. Walnutthe original
  2. Chestnutfits about as well
  3. Lentilsfits less well
  4. Almondfits less well

Fit is the average pairing score against dandelion, butter, egg, vinegar. Candidates are from the same food group and used in at least 100 recipes.
