Stuffed Tomatoes

Oven, in the book's wordsA hot oven

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the tomatoes

  1. Cut the stem end off the tomatoes and scoop out some of the inside with a teaspoon.

  2. In a bowl, mix the bread crumbs with melted butter, salt, and pepper.

  3. Moisten the mixture with a little sweet cream and fill the tomatoes, rounding them full.

Bake and serve

  1. Place the stuffed tomatoes in a pan, add water, and dot with bits of butter.

  2. Bake in a hot oven at 400°F (200°C) for 20 to 30 minutes, being careful not to overcook.

  3. Serve in individual dishes, spooning some of the pan juices over each.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tomatoes
Serve as the hollow shell that holds the filling and softens into the final dish.
Bread crumbs
Absorb moisture and juices, giving the filling body so it holds its shape.
Butter
Adds fat and richness to the filling and browns lightly on the tomato surface.

The step that matters

Baking for 20 to 30 minutes. Tomatoes are mostly water and soften quickly in heat. Overbaking breaks down their walls so they collapse and release too much liquid, leaving the filling soggy and the shape lost.

Swap the tomato

How well each one fits the dish's main ingredients (bread, butter, pepper):

  1. Capsicumfits better
  2. Tomatothe original
  3. Potatofits about as well
  4. Asparagusfits about as well

Fit is the average pairing score against bread, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
