Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Provides the body and starch that give the cream its thick, creamy texture.
Gelatin
Sets the mixture so it holds its shape when chilled in a mold.
Sugar
Adds sweetness and helps balance the flavor of the milk and essence.
Milk
Forms the liquid base that the rice cooks into, giving a rich, smooth body.
Sweet cream
Adds fat and richness, making the finished dessert softer and more velvety.

The step that matters

Dissolving and straining the gelatin. Gelatin must fully dissolve into the hot mixture, or it will leave soft lumps and set unevenly. Straining through a fine sieve removes any undissolved bits and rice grains, giving a smooth, uniformly set cream.

Swap the almond

How well each one fits the dish's main ingredients (rice, sugar, milk, cream):

  1. Almondthe original
  2. Peanutfits about as well
  3. Chestnutfits about as well
  4. Pistachiofits about as well

Fit is the average pairing score against rice, sugar, milk, cream. Candidates are from the same food group and used in at least 100 recipes.
