Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Preheat the oven to 350°F (175°C).

  2. Cream the butter and sugar together until light and fluffy.

  3. Add the milk and flour alternately to the mixture.

  4. Fold in the baking powder and beaten egg whites last.

Bake and assemble

  1. Pour the batter into cake pans and bake until golden.

  2. Once cooled, remove from pans and layer with boiled icing and sliced bananas.

  3. Finish the top of the cake with plain icing.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creamed with sugar to trap air, giving the cake a light, tender crumb and rich flavour.
Egg whites
Beaten and folded in to add air and structure as the cake sets in the oven.
Baking powder
Releases gas in the batter, helping the cake rise and become light.
Flour
Forms the main structure of the cake as its proteins set during baking.
Sugar
Sweetens the cake and helps create a soft, fluffy texture when creamed with butter.
Milk
Adds moisture to the batter and helps it combine smoothly with the flour.

The step that matters

Folding in the beaten egg whites. Egg whites hold air bubbles that give lift. Folding gently, rather than stirring, keeps those bubbles intact so the cake rises well and stays light.

Swap the banana

How well each one fits the dish's main ingredients (sugar, flour, butter, milk, egg):

  1. Vanillafits better
  2. Raisinfits better
  3. Figfits better
  4. Bananathe original

Fit is the average pairing score against sugar, flour, butter, milk, egg. Candidates are from the same food group and used in at least 100 recipes.
