What each ingredient does

Crab apples
Their natural pectin and acidity help the juice set into a jelly.
Sugar
Sweetens the jelly and helps it set firm while preserving it.

The step that matters

Remove from heat as soon as it begins to jell. Cooking past the point where the jelly starts to set keeps evaporating water and concentrating the sugar. The jelly then becomes too stiff, so it is best to stop heating as soon as it begins to set.
