Roast Beef

Why it works: Beef and pepper are a kitchen classic. They rank in the top 10% of all ingredient pairs, and cooks put them together in 18,971 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Sear

  1. Preheat the broiling oven to 400°F (200°C).

  2. Place the roast in a pan under the flame and sear all sides.

  3. Dust the roast with salt, pepper, and flour.

  4. Add trimmings of fat over the roast and in the bottom of the pan.

  5. If the flour is browning too much, add a little water.

Roast

  1. Keep the oven hot initially to sear the meat without hardening its surface.

  2. Turn the roast frequently as it begins to brown.

  3. Baste the roast with the fat in the pan. Baste often.

  4. Reduce the heat after searing to cook the roast more slowly.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef roast
Forms the main meat that is seared and then cooked slowly until tender.
Flour
Coats the surface and helps it brown during searing.
Trimmings of fat
Bastes the roast and adds moisture and flavour as it cooks.

The step that matters

Searing at high heat before slow cooking. A hot initial sear browns the surface and builds flavour, while the later lower heat cooks the interior gently. Searing too gently can harden the surface or let the flour scorch unevenly.
