Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Forms the main body of the loaf and gives it a tender, sliceable texture when cooked.
Eggs
Bind the meat and set during steaming, holding the loaf together.
Bread crumbs
Absorb moisture and help the loaf hold its shape and stay tender.
Salt pork
Adds fat, which keeps the lean veal moist during steaming.

The step that matters

Do not remove from the cans until cold. The loaf is soft and held together by set egg and fat while hot. Unmolding it early can cause it to crumble or slump, so it needs to cool fully in the cans to firm up before removal.

  2. Capsicumbetter flavor fit
  3. Potatobetter flavor fit
  4. Onionthe original

Fit is the average pairing score against veal, pork, bread, egg, pepper, celery, parsley. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
