Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

  1. In a large pot, combine the veal or chicken with the water.

  2. Add the herbs, salt, peppercorns, onion, celery, turnip, and carrot.

  3. Bring to a boil, then reduce heat and simmer for 4-6 hours. Skim off any foam that rises to the surface.

  4. Strain the stock through a fine sieve and discard the solids.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal knuckle or chicken
Releases gelatin and flavour into the water, giving the stock body and depth.
Onion
Adds savoury sweetness and aroma as it cooks slowly in the liquid.
Carrot
Contributes gentle sweetness and aroma to the background of the stock.
Celery root
Adds earthy, aromatic flavour that rounds out the stock.

The step that matters

Skimming the foam. Foam is coagulated protein and impurities that rise during the boil. Skimming it keeps the stock clear and prevents off-flavours from mixing back in.

Swap the onion

How well each one fits the dish's main ingredients (veal, celery, turnip, carrot):

  1. Parsnipfits better
  2. Leekfits better
  3. Beetrootfits better
  4. Onionthe original

Fit is the average pairing score against veal, celery, turnip, carrot. Candidates are from the same food group and used in at least 100 recipes.
