Directions

Prepare the cauliflower

  1. Soak the cauliflower in cold salted water, head down, for 1 hour to remove insects.

  2. Boil the cauliflower in chicken or veal stock or hot water with the onion, parsley, and celery until tender.

  3. Mash the cooked cauliflower through a sieve or potato ricer.

Make the soup

  1. In a saucepan, melt the butter and stir in the flour, cooking for 1 minute.

  2. Gradually add the milk, salt, and pepper, stirring constantly until thickened, about 10 minutes.

  3. Stir in the cauliflower pulp and cook for an additional 5 minutes.

  4. Add the cream and mix well before serving.

What each ingredient does

Cauliflower
Forms the body and bulk of the soup once mashed into a pulp.
Butter
Carries flavour and enriches the base when melted with the flour.
All-purpose flour
Thickens the milk into a smooth white sauce when cooked with the butter.
Milk
Forms the creamy liquid that thickens with the flour into a smooth base.
Cream
Adds richness and a silky texture when stirred in at the end.

The step that matters

Gradually add the milk while stirring constantly. Adding liquid slowly while stirring keeps the flour dispersed so the sauce thickens smoothly instead of forming lumps.
