To Boil Fish

Ingredients

Directions

  1. Put the fish into a kettle of boiling water, enough to cover it.

  2. Add salt and vinegar or lemon juice to the water.

  3. Do not let the water boil rapidly after adding the fish; let it simmer.

  4. Add celery, onion, bay leaf, and peppercorns to improve flavor, if desired.

  5. Cook for 15 minutes per pound of fish.

  6. If not using a fish kettle, place the fish on a plate and tie it in a cloth before putting it in the kettle.

What each ingredient does

Fish
Its protein firms and turns opaque as it cooks gently in the water.
Vinegar or lemon juice
Adds acidity that brightens the flavor of the poached fish.

The step that matters

Keep the water at a simmer after adding the fish. A rapid boil agitates and toughens the delicate protein, which can break the fish apart and make it dry and rubbery. Gentle heat cooks it evenly and keeps the flesh tender and intact.

Swap the celery

The recipe marks celery as optional. How well each one fits the dish's main ingredients (fish, vinegar, onion):

  1. Garlicfits better
  2. Tarragonfits better
  3. Capersfits better
  4. Celerythe original

Fit is the average pairing score against fish, vinegar, onion. Candidates are from the same food group and used in at least 100 recipes.
