Oysters in Shells or Ramquin Dishes

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the filling

  1. Cook the oysters and prepare the sauce as for Creamed Oysters.

  2. Remove the sauce from heat, then add the oysters and beaten egg yolks.

  3. Butter the shells or dishes and fill them about two-thirds full with the mixture.

Top and bake

  1. Melt 1 tablespoon of butter, mix in 2 tablespoons of bread crumbs, and stir until combined.

  2. Cover the top of the filled shells with the buttered bread crumbs.

  3. Bake in a hot oven at 400°F (200°C) for 5 minutes, or until the crumbs are brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Form the main body of the dish and provide its briny flavour.
Egg yolks
Enrich the creamy sauce and help it set lightly when baked.
Bread crumbs
Form a crisp, golden topping that browns in the oven.

The step that matters

Adding the egg yolks off the heat. Egg yolks thicken through gentle heat and can scramble or curdle if the sauce is too hot. Removing the sauce from the heat before adding the beaten yolks lets them thicken smoothly without turning grainy.
