Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the sauce

  1. Melt the butter in a saucepan.

  2. Stir in the flour, mustard, cayenne, salt, and white stock or milk until smooth.

Fill and bake

  1. Add the minced shrimp to the sauce and mix well.

  2. Grease shells or ramekin dishes with butter and fill them with the shrimp mixture.

  3. Top with more buttered crumbs.

  4. Bake in a hot oven at 400°F (200°C) for 10 to 12 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Shrimp
Forms the main filling and provides the savoury, seafood body of the dish.
Butter
Adds richness and fat, and helps the crumbs brown in the oven.
Flour
Thickens the stock or milk into a smooth sauce that holds the shrimp together.
White stock or milk
Forms the liquid base of the sauce, adding moisture and body.
Mustard
Adds sharp, tangy flavour that balances the richness of the butter and sauce.

The step that matters

Stir the flour into the butter until smooth. Cooking the flour briefly in the melted butter and stirring it into the liquid as it loosens prevents lumps and lets the sauce thicken evenly. Lumps left in the sauce will not smooth out once the shrimp is added.

Swap the mustard

How well each one fits the dish's main ingredients (shrimp, milk, butter, flour, pepper, lemon):
