Roast Goose

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the goose

  1. Singe and remove pin feathers from the goose.

  2. Wash the goose in warm soapy water to cleanse it and open the pores.

  3. Draw the goose as you would a turkey or chicken, then wash it in cold water and wipe it dry inside and out.

  4. Stuff the goose with potato stuffing, sew it up, and truss it.

Roast

  1. Place the goose on a rack in a pan and cover the breast with slices of fat salt pork.

  2. Roast in a 400°F (200°C) oven for 1 hour.

  3. Remove the pan from the oven and pour off all the fat, then dredge the goose with flour.

  4. When the flour is brown, add a little hot water and baste often.

  5. Cook until the goose is brown and tender.

Make gravy and serve

  1. Make gravy from some of the fat in the pan, flour, and hot water, seasoning to taste.

  2. Serve the roast goose with apple sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Goose
Provides the meat, which becomes tender and browned through long roasting with basting.
Fat salt pork
Covers the breast, adding fat that bastes the meat and keeps it moist as it roasts.
Flour
Browns on the goose's surface and thickens the drippings into gravy.
Hot water
Loosens the browned flour and drippings into a basting liquid and a thin gravy.
Potato stuffing
Fills the cavity and absorbs juices from the roasting bird as it cooks.

The step that matters

Pouring off the fat and adding hot water before basting. Goose releases a lot of fat, so draining it prevents greasy results, while the flour needs to brown before hot water is added so it toasts rather than turning pasty.

Swap the apple

How well each one fits the dish's main ingredients (potato, pork, flour, sauce):

  1. Avocadofits better
  2. Raisinfits better
  3. Coconutfits about as well
  4. Applethe original

Fit is the average pairing score against potato, pork, flour, sauce. Candidates are from the same food group and used in at least 100 recipes.
