Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set and bind the filling, giving the croquettes body and a firm texture when cooked.
Heavy white sauce
Adds moisture and creaminess, holding the chopped egg together in the filling.
Breadcrumbs
Form a crisp, golden browned crust when the croquettes are fried.

The step that matters

Fry in hot oil until golden brown. The filling is soft and set only by cooking, and the breadcrumb coating needs hot oil to crisp quickly. Oil that is too cool lets the croquettes soak up grease and can loosen the coating before it sets.

Swap the parsley

How well each one fits the dish's main ingredients (egg, pepper, mushroom, sauce):

  1. Parsleythe original
  2. Tarragonfits about as well
  3. Thymefits about as well
  4. Capersfits less well

Fit is the average pairing score against egg, pepper, mushroom, sauce. Candidates are from the same food group and used in at least 100 recipes.
