Why it works: Celery and lettuce match in chemistry and in kitchens. They rank in the top 4% of all ingredient pairs, and cooks put them together in 2,033 recipes. Both carry nonanal, which smells fat, citrus. The science ↓
Pressed Chicken
Ingredients
Directions
Cook the chicken
Boil the chicken in minimal water until the meat separates from the bones.
Remove the skin and fat, then shred the meat.
Season the cooking liquid with salt, pepper, and celery salt. Add celery while cooking (optional).
Reduce the liquid to 1 cup.
Assemble the mould
Grease a mould with butter.
Decorate the mould with hard-boiled egg slices, truffles, pickles, and olives.
Layer the shredded chicken in the mould, alternating light and dark meat.
Pour the seasoned liquid over each layer until all is used.
Press down with a weight.
Refrigerate until cold.
Unmould and serve
Unmould the pressed chicken.
Garnish with lettuce, parsley, watercress, halved hard-boiled eggs, radishes, or olives.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Chicken
- Provides the meat that is shredded and pressed into a firm, sliceable block.
- Cooked chicken liquor
- Seasoned liquid poured over each layer to moisten the meat and help it bind as it sets.
- Hard-boiled eggs
- Decorative slices that add visual contrast when the pressed block is unmoulded.
The step that matters
Pressing and chilling the layers. Even pressure and full cooling let the gelatin from the cooking liquid set the shredded meat into a firm block. Pressing too lightly or unmoulding too early can leave the layers loose and crumbly.
Swap the celery
How well each one fits the dish's main ingredients (chicken, pepper, butter, egg, truffle, olive, lettuce):
- Tarragonfits better
- Parsleyfits better
- Capersfits better
- Celerythe original
Fit is the average pairing score against chicken, pepper, butter, egg, truffle, olive, lettuce. Candidates are from the same food group and used in at least 100 recipes.
