What each ingredient does

Eggs
Set the custard into a firm, sliceable structure as they cook.
Thin cream
Adds richness and moisture, giving the timbale a soft, tender texture.
Milk
Adds liquid that keeps the custard smooth and tender when set.
Bread crumbs
Soak up cream to add body and help hold the custard together.
Cooked ham
Provides the main savory flavor and some body in the custard.

The step that matters

Place the molds in a pan of hot water and cook until the centers are firm. Gentle, moist heat in a water bath keeps egg custard from overheating. Too much heat makes eggs curdle, weep, and turn rubbery, so the centers should be checked for firmness rather than cooked by time alone.

Swap the mustard
