Eggs in Green Peppers

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the peppers

  1. Parboil the peppers in boiling water for 5 minutes.

  2. When cool, cut about 1 inch from the pointed end, remove the seeds, and cut off the stem.

  3. Sprinkle the inside with salt and pepper.

Bake and serve

  1. Break an egg into each pepper and place a small piece of butter on top.

  2. Place the peppers in an agate plate and bake at 400°F (200°C) for 20 minutes, or until the egg is firm.

  3. Serve on a slice of toast, surrounded by white or tomato sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set into a firm filling inside the pepper as they bake.
Green peppers
Act as edible cups that hold the egg while it cooks.
Butter
Adds richness and moisture to the egg as it bakes.

The step that matters

Baking until the egg is firm. Egg proteins set with heat, so the white and yolk need enough time at 400°F to firm up. Pulling the peppers too early leaves the egg runny, while overbaking can make the yolk dry and rubbery.

Swap the tomato

How well each one fits the dish's main ingredients (pepper, egg, butter):

  1. Capsicumfits better
  2. Asparagusfits better
  3. Chivefits better
  4. Tomatothe original

Fit is the average pairing score against pepper, egg, butter. Candidates are from the same food group and used in at least 100 recipes.
