Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the dough

  1. Scald the milk and let it cool slightly.

  2. Dissolve the yeast cake in the warm milk.

  3. Add sugar and salt to the milk mixture.

  4. Stir in the white flour and mix well.

  5. Gradually add whole wheat flour until the dough is kneadable.

  6. Knead the dough until smooth and elastic.

  7. Let the dough rise until doubled in size.

Shape and bake

  1. Shape the dough into loaves and place in greased pans.

  2. Allow to rise again before baking.

  3. Bake in a preheated oven at 350°F (175°C) until golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Milk
Provides liquid that hydrates the flour and adds richness and softness to the crumb.
Yeast cake
Ferments the sugars in the dough, producing gas that makes the loaves rise.
White flour
Adds gluten-forming protein that gives the dough elasticity and a lighter texture.
Whole wheat flour
Forms the main structure of the loaf and gives it a nutty flavour and denser crumb.
Sugar
Feeds the yeast and contributes to browning of the crust.

The step that matters

Knead the dough until smooth and elastic. Kneading develops the gluten network that traps the gas from the yeast. Under-kneaded dough rises poorly and bakes up dense, while the whole wheat flour needs enough working to become kneadable.
