Clam Chowder

Ingredients

Directions

Steam the clams

  1. Wash the clams until clean and place them in a kettle with 1 quart of cold water.

  2. Cook until the top clams open.

  3. Remove from heat and skim out the clams.

  4. Pour the liquid into a dish to settle.

  5. Once cool, cut off the heads of the clams with scissors.

Build the chowder

  1. Fry the onion in the salt pork in the same kettle until brown.

  2. Remove the onion and pork.

  3. Add the sliced potatoes and the clam liquor, pouring carefully to avoid disturbing the sediment.

  4. When the potatoes are soft, add the clams, seasonings, and hot milk, adding more water if desired.

  5. Melt the butter and stir in the flour.

  6. Add the butter‑flour mixture to the chowder or to the hot milk before adding it.

Serve

  1. Place crackers in a tureen and pour the chowder over them.

What each ingredient does

Clams
Provide the main flavor and texture of the chowder.
Potatoes
Add body and starch that soften into the chowder.
Butter
Adds richness and flavor, and with flour helps thicken the milk.
Flour
Thickens the milk and liquor into a creamy base when cooked with butter.
Salt pork
Renders fat that flavors the onion and the broth.
Milk
Makes the chowder creamy and mellows the seafood flavor.

The step that matters

Add the butter-flour mixture. Flour needs to be cooked with fat before liquid is added, or it stays lumpy and tastes raw. Blending it into hot milk or chowder helps it thicken smoothly.

Swap the onion
