What each ingredient does

Round steak
Forms the main meat that becomes tender during long, slow simmering.
All-purpose flour
Coats the steak so it browns well and helps thicken the cooking liquid.
Onions
Add sweetness and aroma as they soften and mellow in the dish.
Mushrooms
Add earthy flavor and moisture to the sauce when included.

The step that matters

Browning the steak in fat. Searing the floured steak in hot bacon or salt pork fat builds deep flavor through browning, and the flour helps that surface color form. Pale searing leaves the sauce tasting flat.
