What each ingredient does

Oysters
Provide the main filling, adding savoury flavour and a tender, moist texture when cooked.
Bread crumbs
Absorb the oyster liquor and help bind the filling so it holds together when stuffed.
Butter
Cooks the pepper and onion, adding richness and browning them lightly for flavour.
Pepper
Softens during baking to hold the filling and adds mild, sweet vegetable flavour.

The step that matters

Press out the excess oyster liquor from the bread crumbs. Bread crumbs soaked in too much liquid make the filling wet and loose, so it may not hold its shape in the pepper or bake up firm.

Swap the onion

How well each one fits the dish's main ingredients (pepper, oyster, bread, butter, tomato, sauce):

  1. Capsicumfits better
