What each ingredient does

Eggs
Whites set around the yolk during poaching, forming the main structure of the dish.
Butter
Adds richness and moisture, softening the eggs and bread with fat.
Bread
Provides a toasted base that gives a crisp, absorbent contrast to the soft egg.

The step that matters

Cook slowly on the side of the range. Gentle heat sets the egg white gradually around the yolk. Vigorous boiling tears the whites apart and leaves ragged, scattered shapes.
