Paella Manantiales Caliente

This is my take on the classic Paella Valenciana, leaving out the snails and subbing smoked sausage for the rabbit (not that I’m averse to either, but I didn’t know where to acquire them here). Translated, the title is Paella Hot Springs. It feeds a sizeable crowd, and my family loved it! I’m calling it a casserole because it doesn’t really fit in any other category.
