Venetian Cakes

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the dough

  1. Cream the butter and powdered sugar until very light.

  2. Add the beaten egg yolks, chopped nuts, flour, and vanilla; mix well.

  3. Take a small piece of dough, roll it in powdered sugar, and form it into a ball.

Shape and bake

  1. Place a piece of nut on top of each ball.

  2. Arrange them an inch apart on a baking sheet.

  3. Bake in a moderate oven at 350°F (175°C) for about 15 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creamed with sugar to trap air, giving the cakes a light, tender crumb and rich flavor.
Egg yolks
Add richness and moisture and help bind the dough together.
Flour
Provides the structure that holds the dough together as it bakes.
Chopped almonds or walnuts
Add texture and a toasty, nutty flavor to the cakes.

The step that matters

Cream the butter and powdered sugar until very light. Beating butter with sugar traps air in the fat, which gives the cookies a tender, light texture. Under-creaming leaves a dense, heavy result.

Swap the vanilla

How well each one fits the dish's main ingredients (butter, sugar, flour, almond, egg):

  1. Raisinfits better
  2. Vanillathe original
  3. Figfits less well
  4. Coconutfits less well

Fit is the average pairing score against butter, sugar, flour, almond, egg. Candidates are from the same food group and used in at least 100 recipes.
