The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

    Shared aroma: beta-damascenone (apple, rose).

Orange and sugar barely smell alike, yet cooks put them together in 19,212 recipes: they work on texture and structure more than aroma.

What each ingredient does

Orange rind
Provides the flavour and the peel that becomes translucent and candied.
Granulated sugar
Sweetens the peel and, in the thick syrup, replaces its water to preserve it.

The step that matters

Cooking the strips in the syrup until translucent. Sugar must slowly penetrate the peel. If the syrup is too hot or cooked too long, it can crystallise or darken, while stopping too early leaves the peel opaque and chewy.
