Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the filling

  1. Cook the oysters and prepare the sauce as for Creamed Oysters.

  2. Remove the sauce from the heat and stir in the oysters and beaten egg yolks.

  3. Butter the shells or dishes and fill them about two-thirds full with the mixture.

Top and bake

  1. Melt 1 tablespoon of butter and mix in 2 tablespoons of bread crumbs.

  2. Cover the top of the filled shells with the buttered bread crumbs.

  3. Bake in a hot oven at 400°F (200°C) for 5 minutes, or until the crumbs are brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Provide the main substance of the dish, cooked briefly in the sauce.
Egg yolks
Thicken the sauce and bind the oysters into a creamy filling when gently stirred in off the heat.
Butter
Adds richness and helps the buttered crumbs brown on top.
Bread crumbs
Form a crisp, browned topping that protects the filling as it bakes.

The step that matters

Stirring the egg yolks in off the heat. Egg yolks thicken through gentle heat; if the sauce is too hot when they go in, they can scramble and turn grainy instead of creamy.
