Roast Goose

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the goose

  1. Singe and remove pin feathers from the goose.

  2. Wash the goose in warm soapy water to cleanse it and open the pores.

  3. Draw the goose as you would a turkey or chicken.

  4. Wash in cold water and wipe dry inside and out.

  5. Stuff the goose with potato stuffing, sew it up, and truss it.

Roast

  1. Place the goose on a rack in a pan and cover the breast with slices of fat salt pork.

  2. Roast in a 400°F (200°C) oven for 1 hour.

  3. Remove the pan from the oven and pour off all the fat, then dredge the goose with flour.

  4. When the flour is brown, add a little hot water and baste often.

  5. Cook until the goose is brown and tender.

Make gravy and serve

  1. Make gravy from some of the fat in the pan, flour, and hot water, seasoning to taste.

  2. Serve with apple sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Goose
Provides the main meat, which becomes tender and browned through long roasting.
Fat salt pork slices
Melt over the breast, basting the meat and adding savory flavor and moisture.
Flour
Browns on the dredged goose and thickens the pan drippings into gravy.
Potato stuffing
Fills the cavity and adds starchy body and moisture as it cooks inside the bird.

The step that matters

Pouring off the fat before dredging. Goose has a large fat layer. Draining most of it before adding flour lets the flour brown in the remaining fat rather than fry in excess grease, and keeps the skin from becoming greasy.

Swap the apple

How well each one fits the dish's main ingredients (potato, pork, flour, pepper, sauce):

  1. Avocadofits better
  2. Limefits better
  3. Lemonfits better
  4. Applethe original

Fit is the average pairing score against potato, pork, flour, pepper, sauce. Candidates are from the same food group and used in at least 100 recipes.
