Why it works: Rice and tomato match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 3,065 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Spanish Rice

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Cut the cooked mutton or lamb into thin slices or cubes.

  2. In a baking dish, layer the meat and sprinkle lightly with salt and pepper.

  3. Cover with ½ inch of cooked rice, then add a layer of tomato sauce.

  4. Repeat layers until the dish is full.

  5. Spread buttered crumbs over the top.

  6. Bake in a 400°F (200°C) oven for 20 minutes.
