Ingredients

Directions

  1. Cut a thin slice from the stem end of the tomatoes and scoop out the insides.

  2. Sprinkle the insides with salt and pepper.

  3. Mix the tomato pulp with an equal amount of buttered cracker crumbs, seasoning with salt, pepper, and onion juice, or use cooked rice or macaroni instead.

  4. Fill the tomatoes with the mixture and replace the slice of tomato.

  5. Top with a thin slice of fat pork and secure with a toothpick.

  6. Bake in a granite pan with a little stock or hot water.

  7. Serve on slices of toast or surrounded by a brown sauce.
