Ingredients

Directions

Make the emulsion

  1. Mix the mustard, salt, and paprika or cayenne with the egg yolks until well combined.

  2. Add the olive oil drop by drop until the mixture begins to thicken.

  3. Once thickened, add the lemon juice or vinegar to thin it out.

  4. Continue to alternate adding the oil, vinegar, and lemon juice until fully incorporated.

Finish and serve

  1. Just before serving, fold in the whipped cream.

  2. Use a wooden spoon, fork, or mayonnaise mixer for best results.

What each ingredient does

Egg yolks
Lecithin in the yolks emulsifies the oil and water, holding the sauce together and making it thick.
Olive oil
Forms the droplets that give mayonnaise its rich, thick body and fat content.
Lemon juice
Adds acidity that thins the sauce and brightens its flavor.
Vinegar
Adds acidity that thins the sauce and sharpens its flavor.
Whipped cream
Adds lightness and a softer, airier texture when folded in at the end.

The step that matters

Adding the oil drop by drop at the start. Oil must be dispersed into tiny droplets before the emulsion forms. Adding it too fast overwhelms the yolk's emulsifiers, so the mixture breaks and separates into oily liquid instead of thickening.
