The flavor team

The pairs that carry this dish. Each one is judged two ways: how much aroma chemistry they share, and how many recipes mention both.

    Shared aroma: eucalyptol (eucalyptus, herbal).

  2. Milk + vanillatop 5% of all pairs

    Mentioned together35,032 recipes

    Shared aroma: beta-damascenone (apple, rose).

Sugar and vanilla share little aroma chemistry, yet 35,032 recipes mention both: they likely work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the custard base and add richness as they cook with the milk.
Heavy cream
Adds lightness and creamy body when whipped and folded into the set base.
Gelatin
Sets the cream so it holds its shape when molded.
Milk
Forms the liquid base that the egg yolks thicken into a custard.
Sugar
Sweetens the custard and balances the richness of the cream and yolks.

The step that matters

Stir the egg mixture into the hot milk and cook for 2 minutes, stirring constantly.. Constant stirring keeps the egg yolks from scrambling on contact with the hot milk, while gentle heat thickens the custard smoothly.

Flavor stand-ins for the almond

How well each one fits the dish's main ingredients (sugar, cream, milk, gelatin, egg, vanilla, wine):

  2. Chestnutabout as good a flavor fit

Fit is the average pairing score against sugar, cream, milk, gelatin, egg, vanilla, wine. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
