Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Forms the body of the dessert, giving it a soft, tender bulk once cooked.
Gelatine
Sets the mixture so it holds its shape when moulded and chilled.
Heavy cream
Whipped into the mixture to add lightness, richness and a creamy texture.
Sugar
Adds sweetness and helps balance the flavour of the milk and cream.
Milk
Dissolves the gelatine and adds a mild, creamy base to the dessert.

The step that matters

Mix the gelatine mixture with the rice when it begins to firm up. Gelatine sets as it cools, so if it is added too early the mixture stays runny and the cream may separate, while if it is left too long it sets in lumps before the rice and cream are evenly combined.

Swap the orange

How well each one fits the dish's main ingredients (rice, milk, sugar, sherry, cream):

  1. Vanillafits better
  2. Strawberryfits better
  3. Figfits better
  4. Orangethe original

Fit is the average pairing score against rice, milk, sugar, sherry, cream. Candidates are from the same food group and used in at least 100 recipes.
