Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the broth

  1. Combine the calf's head and knuckle of veal in a large porcelain vessel.

  2. Place the marjoram, basil, and chopped onion in a clean cloth, then add the cloth with herbs and onion to the vessel.

  3. Pour in 4 quarts of water.

  4. Bring the mixture to a slow boil.

  5. Season with salt and pepper.

  6. Simmer for about 4 hours.

  7. Strain the soup.

Finish and serve

  1. Pick out all the meat from the soup and chop it finely.

  2. Return the chopped meat to the soup and heat the soup again.

  3. Just before serving, add the chopped hard-boiled eggs and thinly sliced lemon.

What each ingredient does

Calf's head
Gives the soup its body and rich flavor as it simmers for hours.
Knuckle of veal
Adds gelatin and savory depth to the broth as it cooks down.
Onion
Contributes aromatic sweetness and savory flavor to the broth.
Hard-boiled eggs
Add richness and a soft, creamy texture to the finished soup.

The step that matters

Bringing the mixture to a slow boil. Boiling hard makes the broth cloudy and can toughen the meat. A gentle simmer keeps the liquid clear and the meat tender over the long cook.
