Salmon
Forms the body of the pudding and provides its main flavor.
Eggs
Bind the mixture and set during steaming to hold it together.
Bread crumbs
Absorb the hot milk and add body, giving the pudding a soft texture.
Milk
Softens the crumbs and keeps the mixture moist during steaming.
Butter
Adds richness and flavor to the milk mixture.

The step that matters

Stirring in the beaten eggs. Eggs set when heated, so they must be mixed in evenly to bind the pudding without leaving pockets of uncooked egg or uneven firmness.
