Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Salt the turkey 12 to 24 hours before cooking.

  2. Make stuffing by grinding stale biscuit, light bread, and corn pone.

  3. Add butter, black pepper, salt, sage, and raisins to the ground bread.

  4. Pour in hot water to make the stuffing smooth, but not too wet.

  5. Stuff the turkey.

Roast

  1. Place it in a roasting pan.

  2. Add 1 pint of cold water to the pan.

  3. Simmer on the stovetop for 1 to 2 hours.

  4. Baste every 15 minutes.

  5. Transfer the turkey to a 350°F (175°C) oven.

  6. Cover the turkey.

  7. Bake until thoroughly done.

  8. Turn the turkey once.

  9. Baste the turkey as before.

Make the gravy

  1. Mix a small amount of flour with water or milk.

  2. Cook for 5 minutes.

What each ingredient does

Turkey
Forms the main body of the dish, cooked through by roasting and basting.
Stale biscuit, light bread, and corn pone
Dry bread base that absorbs the butter and liquid to form a moist, cohesive stuffing.
Butter
Adds fat for richness and helps the stuffing and turkey skin brown.
Seedless raisins
Add sweetness and soft texture within the stuffing.
Flour
Thickens the gravy as it cooks with the liquid.

The step that matters

Pour in hot water to make the stuffing smooth, but not too wet.. Bread absorbs liquid and swells as it sits, so too much water makes the stuffing soggy and dense, while too little leaves it crumbly and hard to pack.

Swap the raisin

How well each one fits the dish's main ingredients (turkey, biscuit, bread, corn, butter, pepper, sage):

  1. Lemonfits better
  2. Limefits better
  3. Figfits better
  4. Raisinthe original

Fit is the average pairing score against turkey, biscuit, bread, corn, butter, pepper, sage. Candidates are from the same food group and used in at least 100 recipes.
