Ingredients

Directions

The book says “a hot oven”. The 400°F in the steps is the modern equivalent, not the book's own figure.

Prepare the turkey

  1. Select a young turkey and dry pick it.

  2. Wipe the inside with a damp cloth; do not wash with water.

  3. If the turkey is not tender, parboil it for 1 hour before roasting.

  4. Stuff the turkey loosely with dressing and sew it up with twine.

  5. Draw the legs against the body, fold the wings under the back, and tie everything with cotton cord.

Roast

  1. Grease the turkey well with butter and place it in a hot oven (400 °F / 200 °C) to sear quickly.

  2. After searing, add 1 pint of boiling water and baste frequently.

  3. Roast for 20 minutes per pound.

What each ingredient does

Turkey
Forms the main body of the dish; its tenderness depends on age and cooking time.
Butter
Coats the skin to promote browning and adds richness to the surface.
Giblet dressing
Fills the cavity, adding flavor and moisture as it cooks inside the bird.
Boiling water
Added to the pan to create steam and moisture while the turkey roasts.

The step that matters

Sear at high heat, then add water and baste. Searing in a hot oven starts browning the skin quickly, and adding water and basting keeps the pan moist so the meat does not dry out during the long roast.

Swap the sage

The recipe marks sage as optional. How well each one fits the dish's main ingredients (turkey, butter, bread, pork, pepper, onion):

  1. Thymefits about as well
  2. Sagethe original
  3. Garlicfits about as well
  4. Parsleyfits less well

Fit is the average pairing score against turkey, butter, bread, pork, pepper, onion. Candidates are from the same food group and used in at least 100 recipes.
