Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tomatoes
Form the body and liquid base of the sauce.
Butter
Carries the flour and adds richness to the sauce.
Flour
Thickens the sauce when cooked with butter and stirred into the tomatoes.

The step that matters

Cooking the butter and flour until brown. Flour cooked in fat must be stirred steadily; if it is not cooked evenly it can taste raw or form lumps, and stirring it smooth before adding it to the tomatoes helps the sauce thicken evenly.
