Chicken Salad

Why it works: Celery and pepper match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and 16,012 recipes mention both. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

What each ingredient does

Hen
Provides the main cooked meat that forms the body of the salad.
Hard-boiled eggs
Add richness and body through the yolks, and firmer texture from the whites.
Cider vinegar
Adds acidity that brightens the flavor of the rich chicken and egg.

The step that matters

Mix in the boiling cider vinegar last. Hot vinegar added at the end gives a sharp, bright flavor without being cooked down or diluted by the other ingredients, so it should be stirred in after the salad is otherwise assembled.

Flavor stand-ins for the celery

How well each one fits the dish's main ingredients (egg, cider, vinegar, pepper):

  1. Tarragonbetter flavor fit
  2. Dillbetter flavor fit
  3. Allspicebetter flavor fit
  4. Celerythe original

Fit is the average pairing score against egg, cider, vinegar, pepper. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
