What each ingredient does

Eggs
Egg yolks and beaten eggs thicken the dressing as they cook and bind it into a creamy texture.
Butter
Melted and whole butter add richness and smoothness to the dressing.
Milk
Milk dilutes the dressing and adds creaminess while it thickens gently.
Vinegar
Vinegar adds acidity that sharpens the flavour and balances the rich dressing.
Chicken
Boiled chicken forms the main protein body of the salad.
Celery
Chopped celery adds crisp texture and a fresh, mild flavour.

The step that matters

Cook the dressing over low heat until thick, stirring constantly. Egg proteins set at moderate temperatures and can scramble if the heat is too high or the mixture is left unstirred. Constant stirring over low heat lets the eggs thicken the dressing smoothly.

Flavor stand-ins for the celery

How well each one fits the dish's main ingredients (chicken, butter, egg, vinegar, mustard, pepper, sugar):

  1. Tarragonbetter flavor fit
  2. Capersbetter flavor fit
  3. Dillabout as good a flavor fit
  4. Celerythe original

Fit is the average pairing score against chicken, butter, egg, vinegar, mustard, pepper, sugar. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
