Why it works: Celery and mustard are a kitchen classic. They rank in the top 2% of all ingredient pairs, and 4,169 recipes mention both. Both carry guaiacol, which smells smoky, sweet. The science ↓
Chicken Salad
Ingredients
Directions
Cook the chicken
Boil the whole chicken in salted water until the meat falls from the bones.
Once cool, remove the bones and cut the chicken into small pieces using scissors.
Prepare the salad base
Cut the celery into small pieces (do not chop).
Chop the hard-boiled eggs finely and mix with the chicken and celery.
Make the dressing
For the dressing, mix the sugar, flour, salt, pepper, and mustard in a bowl.
Add the 2 unbeaten eggs and beat well.
Heat the vinegar until warm, then gradually pour it into the dry mixture while stirring continuously.
Remove from heat when the dressing thickens.
Combine and serve
Once cooled, pour the dressing over the chicken and celery mixture.
Just before serving, gently fold in the whipped cream.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Eggs
- Unbeaten eggs thicken the dressing as they cook, and hard-boiled eggs add body to the salad.
- Flour
- Starch thickens the dressing and gives it a smooth, stable body.
- Vinegar
- Adds acidity that sharpens the dressing and balances its sweetness.
- Heavy cream
- Whipped cream adds richness and a light, creamy texture when folded in.
- Sugar
- Adds sweetness that balances the acidity of the vinegar.
The step that matters
Remove the dressing from heat when it thickens. Eggs and starch thicken as they heat, but overcooking can curdle the eggs and make the dressing grainy. Removing it as soon as it thickens keeps it smooth.

Fit is the average pairing score against chicken, egg, sugar, flour, pepper, mustard, vinegar. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
