What each ingredient does

Gelatine
Sets the liquid into a firm, sliceable structure as it cools.
Sugar
Adds sweetness and helps balance the tartness of the fruit.
Oranges
Add acidity and fresh citrus aroma to the salad.

The step that matters

Dissolve the gelatine fully in the boiling liquid. Gelatine only sets properly when it is completely dissolved. Undissolved granules leave gritty, soft patches and weaken the set, so stir until no grains remain before the mixture cools.

Swap the orange

How well each one fits the dish's main ingredients (pineapple, banana, sugar):

  1. Vanillafits better
  2. Strawberryfits better
  3. Pearfits better
  4. Orangethe original

Fit is the average pairing score against pineapple, banana, sugar. Candidates are from the same food group and used in at least 100 recipes.
