What each ingredient does

Egg yolks
Emulsify and thicken the dressing as they cook over steam.
Whole eggs
Set and thicken the dressing as the mixture cooks while being whipped.
Vinegar
Adds acidity that brightens the dressing and balances the richness.
Cold butter
Adds fat and richness, helping the dressing turn smooth and creamy.
Sugar
Adds sweetness that balances the acidity of the vinegar.

The step that matters

Whip constantly over boiling water until thickened. Egg proteins set gently with heat, so constant whisking over steady, not violently boiling, water spreads heat evenly and keeps the eggs from scrambling into lumps.
