Why it works: Corn and walnut match in chemistry and in kitchens. They rank in the top 9% of all ingredient pairs, and cooks put them together in 349 recipes. Both carry 2-nonenal, which smells fatty, green. The science ↓

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the corn

  1. Remove the kernels from the corn cobs by scraping from the large end down.

  2. Season the corn with salt, pepper, and sugar.

Make the omelette

  1. Beat the egg yolks gently and stir them into the corn mixture.

  2. In a non-stick pan, melt the butter over medium heat.

  3. Beat the egg whites until stiff peaks form and fold them into the corn mixture.

  4. Pour the mixture into the hot pan and cook for 1 minute until it begins to bubble.

Bake and serve

  1. Transfer the pan to a preheated oven at 400°F (200°C) and bake until puffed and golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites trap air and give the omelette its light, puffed structure as it sets.
Sweet corn
Supplies the main body, natural sweetness and moist, tender texture.
Butter
Adds richness and flavor and helps keep the omelette from sticking to the pan.
Sugar
Adds sweetness that balances the salt and encourages golden browning in the oven.

The step that matters

Folding the beaten egg whites into the corn mixture. Stiff whites hold the air that makes the omelette rise. Stirring them in vigorously knocks out that air, so the omelette comes out flat and dense instead of puffed.

Swap the walnut

How well each one fits the dish's main ingredients (corn, egg, pepper, sugar, butter):

  1. Almondfits about as well
  2. Beansfits about as well
  3. Walnutthe original
  4. Lima beansfits about as well

Fit is the average pairing score against corn, egg, pepper, sugar, butter. Candidates are from the same food group and used in at least 100 recipes.
