Why it works: Flour and egg are a kitchen classic. They rank in the top 15% of all ingredient pairs, and cooks put them together in 106,462 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓

Ingredients
Directions
The book says “a very hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Prepare the dough
Preheat the oven to 400°F (200°C).
Mix the grated cheese, flour, salt, and cayenne in a bowl.
Add the beaten egg yolk and enough ice water to form a paste.
Shape and bake
Roll the paste very thin and cut into strips 5 inches long and ¼ inch wide.
Bake the strips in the preheated oven for about 10 minutes until golden.
Optionally, shape scraps into small rings and bake them as well.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- English cheese
- Provides savory flavor and fat, and helps the paste hold together and brown in the oven.
- Flour
- Forms the structure of the paste so the thin strips hold their shape when baked.
- Egg yolk
- Adds richness and fat, and binds the dough into a smooth, workable paste.
The step that matters
Roll the paste very thin. Thin strips bake quickly and crisp fully; thick pieces stay soft in the center and may not brown evenly before the edges over-brown.
“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
