Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. In a bowl, mix sugar, flour, and a little cold milk.

  2. Stir this mixture into the boiling milk and cook until thick and smooth.

  3. Add the butter and mix well.

  4. Stir the mixture into the well-beaten yolks of the eggs.

  5. Gently fold in the beaten egg whites.

  6. Pour into a shallow dish and bake in a 400°F (200°C) oven, placed in a pan of hot water.

  7. For the sauce, beat together 1 small cup of butter, 1 cup of sugar, and 1 egg until creamy.

  8. Add 1 teaspoon of vanilla and 4 tablespoons of hot water, then place in a pan of hot water on the stove to warm.
