Crab Apple Jelly

Ingredients

Directions

Prepare the apples

  1. Quarter the apples and remove any black seeds or spots.

  2. Place the apples in a preserving kettle with ½ cup of water to prevent burning.

  3. Cook on the fire, adding more water as it evaporates, until the apples boil to a pulp.

  4. Strain the apples through a coarse flannel.

Make the jelly

  1. For each pint of juice, add 1¼ pounds of refined sugar in a porcelain kettle.

  2. Pour the juice over the sugar, stirring frequently.

  3. Skim the mixture before it boils and cook for about 20 minutes, or until it congeals on a spoon.

  4. Pour into hot jelly glasses and cover when cold.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ripe crab apples
Provide the pectin and acidity that let the juice set into jelly.
Refined sugar
Sweetens the jelly and helps it thicken and set as it cooks.

The step that matters

Skim the mixture before it boils and test for set on a spoon. Skimming before boiling removes foam and impurities for a clear jelly. Cooking must stop at the gel point, when the mixture congeals on a spoon; undercooking leaves it runny, while overcooking makes it stiff.

Swap the apple

How well each one fits the dish's main ingredients (crab, sugar):

  1. Raisinfits better
  2. Lemonfits better
  3. Vanillafits better
  4. Applethe original

Fit is the average pairing score against crab, sugar. Candidates are from the same food group and used in at least 100 recipes.
