Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the filling

  1. Mix the left-over meat, rolled crackers, egg, savory, thyme or sage, grated onion, pepper, and salt in a bowl.

  2. Add a little milk or water to moisten the mixture.

Bake and serve

  1. Pack the mixture lightly in the center of the macaroni.

  2. Place the macaroni in a pan of hot water.

  3. Bake in a 400°F (200°C) oven for 30 minutes.

  4. Pour over any left-over gravy or tomato sauce before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg
Binds the filling so it holds together when baked.
Soda crackers
Absorb moisture and add body to the filling, keeping it tender rather than dense.
Left-over meat
Provides the main savory filling that the macaroni is stuffed with.
Onion
Adds aroma and savory flavor to the filling as it bakes.

The step that matters

Moistening the filling. Adding milk or water gradually until the mixture is moist but not runny keeps the filling cohesive. Too little liquid leaves it dry and crumbly; too much makes it soggy inside the pasta during baking.

Swap the onion

How well each one fits the dish's main ingredients (meat, egg, thyme, pepper, milk):

  1. Capsicumfits better
  2. Potatofits better
  3. Asparagusfits better
  4. Onionthe original
