Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 300°F (150°C).

  2. Sift and measure the sugar and flour, then set aside.

Make the batter

  1. In a bowl, whip the egg whites with a pinch of salt until foamy.

  2. Add the cream of tartar and continue whipping until very stiff.

  3. Gradually add the sugar while beating, then mix in the almond extract.

  4. Gently fold in the flour until just combined.

Bake

  1. Pour the batter into an ungreased tube pan and bake for about 40 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped into a foam that gives the cake its light, airy structure.
Granulated sugar
Sweetens the cake and stabilizes the whipped egg whites as it is beaten in.
Flour
Folded in gently to give the cake enough structure to hold its shape.
Cream of tartar
Acidifies the egg whites, helping them whip to a stiffer, more stable foam.

The step that matters

Fold in the flour gently. Overmixing knocks air out of the whipped egg whites, which makes the cake dense and flat. Folding just until combined keeps the foam intact so the cake rises well.
