Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Mix macaroni with left-over meat, rolled crackers, egg, savory, thyme or sage, grated onion, pepper, and salt. Add a little milk or water to moisten the mixture.

  2. Pack the mixture lightly in the center of the macaroni.

Bake and serve

  1. Set in a pan of hot water and bake in a 400°F (200°C) oven for 30 minutes.

  2. Pour over a sauce made from left-over gravy or tomato sauce.

What each ingredient does

Macaroni
Forms the bulk of the dish and provides its base structure.
Egg
Binds the mixture so it holds together when baked.
Soda crackers
Absorb moisture and add body to the filling.
Left-over meat
Supplies the savory protein and flavour of the filling.
Onion
Adds aromatic flavour and a little moisture to the filling.

The step that matters

Adding the milk or water. The mixture should be moistened just enough to bind without becoming wet. Too much liquid makes the filling loose and soggy, while too little leaves it dry and crumbly after baking.

Swap the onion

How well each one fits the dish's main ingredients (meat, egg, thyme, pepper, milk):

  1. Capsicumfits better
  2. Potatofits better
